Ingredients


For Chilli Garlic Sauce
10 whole dry kashmiri red chillies
2 tbsp roughly chopped garlic (lehsun)
5 tbsp vinegar
1 tbsp sugar
salt to taste
2 tbsp sesame (til) oil

Method


For chilli garlic sauce

  1. To make chilli garlic sauce, remove the stems of the kashmiri red chillies and put them in enough hot water, cover with a lid and keep aside for 30 minutes. Drain.
  2. Combine the soaked kashmiri red chillies, garlic, sugar, vinegar and salt and blend in a mixer till smooth.
  3. Transfer the mixture into a deep bowl, add the sesame oil and mix well.
  4. Store the chilli garlic sauce in an air-tight container in the refrigerator and use as required.

We have made use of Kashmiri red chillies which provides a fiery red colour and mild heat but, you can use any other variety or a combination of 1-2 dried red chillies depending upon the spice level you can handle. Also, we have not removed the seeds of the chillies but if you want a more smooth chilli garlic sauce and less spicy, you can remove the seeds of the chillies before putting them in water. Fresh chillies like Thai bird-eye or cayennes, red jalapenos or Fresno peppers can also be used if available.

  4. After half an hour, drain the chillies using a strainer and discard the water. Soaking softens the red chillies and helps in blending easily.
